Chef Jamy exhibited a love for culinary arts when he was just young boy at the early age of 10. With the privilege of training alongside his brother, Chef Henry Franklin, Jay’s love for food and exquisite flavors continued to grow. He always dreamt that one day his dishes would make people happy and deeply satisfied.

As a young Chef, Jamy become an extraordinary force in international cuisine under Chef Erwin Dreger, developing a niche for Caribbean cuisine and culture. He quickly became known for his rich flavors with a unique Caribbean twist.

After 10 years, Chef Jay perfected his line of Caribbean spices and marinates. Furthering his culinary career, Chef Jamy continued to delight with his flavorful cuisine as Head Chef at Sunbeam Trade Shows, Marriott Hotels, and the Shedd Aquarium. Today, Chef Jamy is the Head Chef of J. Spice, with its flagship restaurant located in Politon Row in Chicago, IL.
